We are incredibly proud of the lamb that we raise. Our sheep are a mix katahdin hair breed sheep. Hair sheep have less lanolin and oils , so the meat is less gamey than other breeds. Even people who think they hate lamb love the taste of our lamb; this isn't your supermarket lamb. All of our meat is processed in a provincially inspected facility and humane handling is ensured. Whether it is a lamb and stout stew, or a lamb curry, lamb stew cubes make for a slow cooked belly filling meal.
The popular Christmas or Sunday roast dinner cut. Great roasted with some olive oil and herbs, but take care not to overcook or it will dry out.
Although the shoulder steaks are tougher than chops, and have more connective tissue, they are full of flavor and offer a more economical option to chops. A good marinade will help break down some fibers, also takes great to slow cooking or braising.
Since it is from such a hard working muscle, the shoulder roast is best slow cooked. This roast makes a wonderful pot roast, or pulled meat when treated right.
Lamb chops are lean, tender and delicious. Our favorite way to enjoy them is to simply add some lemon juice, olive oil, rosemary and salt and pepper to them and grill them. Depending on who they are for, we like them, grilled to 135-140F.

Goat is one of the most popular meats worldwide, and yet to the average North American consumer is untried. When you mention goat, most people turn their noses up at it and say that it tastes "like a billy goat", but in reality goat tastes nothing like this. Goat meat is lean, and doesn't marble like beef, which also means it can dry out quicker when cooked. It is sweeter than lamb, and has a wonderful earthy flavor. A must try if you like lamb , don't worry, they are eating grass, not pop cans.

Goat stew cubes make an amazing curry, definitely a must try.
Pan fried or grilled goat steaks offer you lean meat that and contains less fat and cholesterol than both lamb and beef.
The best slow cooked, whether that is braising, stewing or slow cooker.
The tenderest cut of the goat. Quick to prepare, and amazingly good, goat chops have a very mild flavor, and take well to pan frying or grilling.
Cook a goat leg similar to how you would cook a lamb leg. Tastes good marinated in aromatic herbs and slow cooked on the grill.
Slow cook them in a curry or prepare on the BBQ as you would pork ribs.
